Spaghetti squash

I have one plant (3 squashes) in my veggie-plot, even though I did read it needs lots of warmth and to be real ripe to be cooked (not like zuccinis), but I hoped the summer might be favorable.
Well, it wasn't.
Has anybody any experience cooking it 'medium ripe' ?
And yes, I've giggled (http://www.gardeningknowhow.com/edible/ ... peness.htm), but it would be interesting to know what happens in real life.

I have tasted a few "new" things in the last 10 years, mainly "bush" foods courtesy of Aborigines.

Tried this last year, one of the cactus fruits.

Could probably get away with roasting that beastie in a covered dish with a little stock, then slathering it in butter and a bit of salt.

Totally forgotten about that little animal. Used to grow them in the UK. Can't think for the life of me how we used to cook them. That was a really helpful post :roll:
