Just back from our local butcher (who won the 2018/2019 UK 'Butcher of the Year' award) after having snagged a kilo of beef short ribs. Beauties they are!

They will be slow cooked in a red wine oyster sauce with red onions and whole garlic.

To be served with spicy, sticky rice.

Bought a large lump of brisket yesterday at the butcher shop in Aberfeldy. The brisket is now slow-pot-roasting with herbs, veggies and beef stock, and will be demolished with gravy, Jersey Royal spuds and tender stem brocolocolocoloc.

Well done, Magnus! What are called the 'poorer cuts' of beef are, in fact, often more flavourful. Slow cooking makes them more tender and renders any fat.

As a polite suggestion, may I suggest adding some oyster sauce to the mix and press through a sieve for a delicious sauce.

I have never previously had sea bass - it was delicious!

No such thing as Sea Bass.Its a figment of celeb chefs imagination on TV.Its Bass. ;))) How often do you see Sea Cod,Haddock,Plaice etc etc? Never.

Around our coast we have one species of Bass.We do not have freshwater Bass in this country.America yes.

Just preparing the ingredients for a bacon,onion and mushroom gravy to go with the bangars and mash.Some how I just felt the need for a good old fashioned sausage
meal on this evening of on/off rain showers that so reminds me of England.

Bob2s, just down the coast from you. Local butcher in ShoalHaven Heads has won multi awards for his sausages. His traditional thick pork sausages are snags to die for. Bakery next door, pick up some fresh long bread rolls. Serve with oodles of fried onion, just slightly caramelised, magic.

In this country they are called Bass by Anglers and angling magazines alike.They were christened Sea Bass by the gobsh*te cheffy chefs.When they refer to Sea Cod,Plaice,Haddock etc I will bow to your better knowledge,but in the meantime I will refer to my 55 years knowledge of sea fishing.

I've often wondered about sea bass as had never heard of it until recently until it started appearing on menus everywhere, not just poncy places, which I don't go to anyway. Thanks for putting my mind to rest about that.

Now my other gripe is this 'deconstructed' nonsense. I was offered a 'deconstructed' salad at the restaurant on a wine estate recently. I asked the waiter if I got a discount for doing the work of the kitchen staff, whizz, straight over his head .......

I like bass. Dust with flour, pan-fry in butter with a handful of samphire, plate up and finish with more butter and lemon juice.

Tonight's tea is baked spud with prawns in seafood sauce.

Just had a meeting with the chef. He tells us sea food risotto for lunch and courgette pie for supper. He very kindly cooks off the menu for us. Mrs Ex-Ascot assures me that after 3 months she has not forgotten how to cook.

Allotment tea tonight, cold new potatoes (Pentland Javelin) with mint and chives, lettuce, Chinese leaf, onion with cold chicken.
Raspberries from the plot for afters.

Have a high volume of cabbages, spuds, onions, kale, spinach now available, worth all the digging.
