Hmm, tonight will be Roast Duck, Roast Pork Belly, BBQ Pork, all of which was hanging in the widow of the local Chinese butcher a few hours ago...noodles & Chinese greens, swashed down with plenty of red wine ... :))

Had a lot of mixed mushrooms left over so making a Mushroom and Potato soup.

It's an Australian recipe but it will be ok for humans won't it ?😉

Salmon fishcakes which will be cooked in the air fryer. :)

Frying air instead of the salmon TS? I thought sticking your fishy outside on a sheet of tin during these 40C+ days would fry him up nicely.

Would kill mercilessly for a heaped helping your sun-dried tomato risotto for din dins right now! =p~

Bought a fresh salmon in town earlier for Ap to cook up. ‘Happy Salmon’ with the usual blah blah ‘happy’ attendant signage. I’m not concerned it was swimming happily earlier today. Don’t care that it slept in the river last night, don’t give a rat’s how it slept nor who it slept with. Just as long it’s non-farmed and wild. Should be very helfy and yummy! 🐟

Got a big chunk of topside of beef waiting to be pot-roasted with veggies and stock, and a bottle of Beyerskloof Pinotage with which to wash it down.

+1 with you, Slasher, for the wild salmon. Much better colour and taste.

Slasher, unlikely your salmon was a happy wild one. Norway is the biggest producer of farmed salmon in the world and over 90% of salmon imported into SE Asia is from the destructive salmon farms in N Europe.

If you live in that part of the world buy some happy swordfish. 'Malasugi' in Filipino. Great fish with solid flesh and can take a sauce. About £3 per kg down my way at the wet market.

Tonight: roast beef and trimmings. Aberdeen Angus matured as it should be.

It was popular at one hotel we stayed at on Reunion, they called it 'espadon', we were not at all taken by it.

Dunno if the Indian Ocean variety is unique/different.

Swordfish is spada in Italy. Often turns up on the menu in our hotel.
