It is Labor Day weekend here in the US and I'm going to be preparing a Porchetta ,for some friends we are having over ,as the video below shows.I will prepare the roll today and let it sit overnight and then roast it tomorrow.It takes time but it is all worth it.

Grandson visiting tomorrow and has requested meatballs in tomato sauce, just made them and partially cooked them, they will be finished off tomorrow and will taste delicious.

I'm just waiting for our gardener to pick some rape so I can make a spanakotiropiter for lunch.

Change of plan, the rape is covered in insects. :(

I guess I'm going to have to raid the freezer. ;;)

This weekend, before the new regs come into force, we're going to have two other households round for an end of summer barbie and drinkies. 8 people in total. All perfectly legal until 00:00 on Monday.

I've got plenty of Suya Pepper and all the other ingredients and I've taken note of an online recipe and procedure.

Tonight will be a dummy run in case I make an arse of it on Sunday. I've never made Suya before, so it will be very interesting to find out if my first attempt results in an approximation to the real thing that I remember so well from my time in Nigeria.

My experiment yesterday with home made suya was semi-successful.

Immensely tasty, though slightly different from the taste I remember from the poolside suya booth in Rumukuroshe. I think that's because every tribe has a slightly different composition of their suya powder.

I say semi-successful because I had massively overdosed the beef with the Suya pepper powder. A tenth as much will be used on another experimental batch today so as to avoid hotex ring state.

This evening is...Georgian style Roast chicken with walnut sauce...red onion, tomato & cucumber salad, Lemon, white onion and parsley salad, garlic naan bread with a garlicky minted yoghurt.... :)

Christ EA01,I picture your kitchen having a larder and freezer equivalent to a supermaket and delicantessen all rolled into one given all the fancy meals you knock up.It would take a month of Sundays to find duck entrails in my part of the world.

Just made two portions of salmon fishcakes which will be cooked in the air fryer. And I managed to find Heinz baked beans in Safari Spar last week to go with them. :D
