Apology is pretty short, but I'm guessing there's one with a single letter even if I don't know what it is.

Oology is the study of birds' eggs, according to the American Ornithological Society. The term was first used to promote William Hewitson's book British Oology in 1830.

Which sport has no umpires, even at Olympic level - (on the field of play at any rate)?

Ok, I wasn't careful enough with the question. It's all yours.
I was hoping for Curling. The Umpire is only consulted when both players or teams ask. Otherwise, it's entirely self-policing.

Twas indeed! The Treat of Paris confirmed American independence and its borders, fishing rights etc. Indeed the date has a claim as Independence Day as does 2 July but for other reasons.

You have control, sir.
