I'm pretty much omnivorous.Game, offal, all OK, but for some reason I have an aversion to soft-shelled crab. Go figure. Next Paris visit, I will try andouille or andouillette. Pig's tripe sausage. I love sheep's tripe so it's not too much of an adventure.

Be prepared for the stink of andouillette,given what it is made from it is no wonder.You can have my share plus any brains and tripe.
