Up at the crack to load bread making machine, then back to bed. Takes 4+ hours. Later, out walking dog for an hour, by which time starving.
Bread machine goes beep. Two rashes of bacon in frying pan, followed by two eggs. It's my bread so I can chop both ends off. So two crunchy, still warm, crusts, resplendent with bacon and eggs, and mug of tea. This, for me, is truly heaven.
PS. Tea made with proper tea leaves in an infuser.

I must admit that it does sound heavenly Alison, without the cholestrol of course. There is nothing more civilised than freshly baked, home made, bread.

I have learned that sourdough bread, while having carbs, has a low glycemic index.
Glycemic index (GI) is a numeric value assigned to foods based on how slowly or quickly they can increase your blood glucose levels. It is a rating system for carbohydrate-containing foods. Foods having a low GI are the ones that tend to release glucose slowly and steadily. By contrast, foods that fall high on the GI scale release glucose rapidly.
I will be acquiring a new sourdough starter and dusting off my R2 unit (Bread-maker that makes cylindrical loaves and has a glass dome).
Can't wait for fresh baked sourdough.

My better half's Swedish friend Cecilia, makes the most perfect sourdough, she often brings a loaf, and a bottle or two of good wine to ruin the good glycemic balance, when she visits us! She is always welcome here, not just for her sourdough, but because she is charming, and very easy on the eye too!
