One wonders why so many posters refer to 'one' when they obviously mean 'I'

One has never referred to oneself as 'one', and if one did, one's friends would relieve themselves on one from a great height

But to answer the point, people might be in the habit of it since it provides a modicum of legal deniability in work situations.

I remember when Prince William was a year old, a popular newspaper carried the title:

"One is One today".....

I thought it amusing.

HMQ used to refer to herself as 'one'. However she would also say Prince Philip and I.

There must be a convention but one is buggered to know what it is.

One is an English language, gender-neutral, indefinite pronoun that means, roughly, "a person".
For purposes of verb agreement it is a third-person singular pronoun, though it sometimes appears with first- or second-person reference.
It is sometimes called an impersonal pronoun.
It is more or less equivalent to the Scots "a body", the French pronoun on, the German/Scandinavian man, and the Spanish uno.
It can take the possessive form one's and the reflexive form oneself, or it can adopt those forms from the generic he with his and himself.

Reminds me of a line from a comedy revue more than 50 years ago - sorry can't remember the title, but the Princess Anne character says "My husband and I, er, me, Lord Ringo of Merseyside..."

One remembers a comedian (Billy Connoly?) speculating that Charles, on his first night with Diana would say "One would like to give one one".
